It looks like rice, but it cooks very fast, so you can get the effect of rice in a shorter time. I don't often use it for cooking, but I always like it. I mean you can't eat pasta. Except for bow tie pasta, but this is another day's story. 😉Do you like lemon chicken? Try my Easy Butter Lemon Chicken or this Lemon Chicken Orzo (one-pot pasta).
A close-up of lemon chicken rice soup in a yellow pot This lemon rice chicken soup is easy to make. Just saute onions, carrots and celery, add garlic and flour, add broth, seasonings and chicken, and cook for 15 minutes. The chicken will cook at that time, you can add the orzo and cook for another 10 minutes or so until the pasta is ready. You take the chicken out and chop/shred, add it back to the soup, and then it's time to add the lemon juice, parsley, salt and pepper. Recipe instructions and tips: If you want, you can use chicken thighs instead of chicken breasts.
If you want to make this with already cooked/roasted chicken, I recommend adding the chicken at the same time as the orzo so you don't overcook it. If you are concerned about salt, use low-sodium chicken broth. You may need to add more chicken broth to the leftovers because orzo will absorb it. This soup can be frozen, but the orzo does expand a bit.
If you want to freeze the whole batch, I suggest adding orzo after thawing. If you really want a stronger lemonade, I suggest you add some lemon zest. For this, I like my micro flat grater/grater.
